Pisa Moorings Pinot Gris 2008

Wine Description:
This Pinot Gris shows white peach, guava, lime and rock melon aromatics and a warm, richly textured mouth feel. This wine shows loads of tropical fruit flavours with a generous finish.

Winemakers Notes:
This was the first harvest of Pinot Gris grapes There were two ferments. The grapes were whole bunch pressed Some lees were taken to fermentation Fermented with an indigenous yeast strain Coolish fermentation between 12-18°celsius 15% barrel fermentation Rested on its yeast lees for 4 months Some residual sugar retained to balance the natural acidity Minimal fining, wine has undergone filtration due to its residual sweetness
Viticulture Notes:
Winter pruning of the Pinot Gris vines takes place through June. The vines are pruned to two canes and bud numbers limited to ensure quality fruit for the following season. Leaf plucking in mid-summer allows for plenty of sun on the grapes which encourages them to ripen and develop before harvest in April.
pH: 3.45, TA: 6.0 g/l.
